To be mentioned among the rarest varieties Miele di Corbezzolo (Strawberry-tree honey), Miele di acacia (acacia honey), sun flower honey and sulla honey (a flowering plant similar to alfalfa).
Chestnut honey is also very appreciated for its classic flavour, with its darker colour, and its less sweet taste.
In San Gimignano honey is mainly produced in the Acacia and Millefiori variety.
